Ride into History… Bike tour of via Traiana
Take a bike tour along coastal dunes, where you will discover the ancient rural landscape of Puglia. The ancient road, built by Emperor Trajan, is lined with dry-stone walls and centuries-old olive trees that protrude like odd-shaped monuments that contrast with the red earth and golden grain fields.
Hiking tour of the Torre Guaceto nature reserve
Take an exciting hiking tour through one of the most spectacular natural areas along the lower Adriatic Sea, the nature and marine reserve of Torre Guaceto.
We will explore the protected marine area with its cliffs, bays, wetlands, and fresh water pools. The area is home to many plant and animal species. Our hike will end at the charming 16th Century tower that gives the park its name. From there, you will take in the breathtaking view of the horizon, where the turquoise blue sky melts into the Adriatic Sea.
Caves of Castellana, natural wonder
The beautiful Castellana caves are the magical expression of nature’s tireless work over millions of years. In this natural phenomenon, you will recognize spectacular spires that reminiscent of Gothic cathedrals, as well as mythical animals and ancient trees. The guided tour focuses on one of the most complex and spectacular underground karst cave systems in Italy.
Oria and Manduria, on the path of Primitivo wine…

Before reaching the “temple” housing Primitivo wine, though, we must stop for a walk through the alleys of the ancient town of Oria. This majestic small town sits on top of a hill in the area of North Salento. Oria is dominated by an imposing medieval castle and the multicolored dome of its cathedral, which hides a 16th Century crypt with mummified bodies of the members of the mysterious Confraternity of Death.
We will continue on the path of Primitivo wine, reaching the historic center of Manduria. There we see the town’s impressive and elegant palaces, the arch of triumph of Sant’ Angelo and a 5th Century cathedral.
The highlight of our tour is a tasting that features the wines of Puglia. Primitivo wine is not only an amazing product, but part the history of the region, preserved from generation to generation, and one of the most popular wines of Southern Italy. We will visit the Museum of Primitivo Wine and will taste four versions of the PDO Primitivo di Manduria, accompanied by foods that will enhance the characteristics of these wines.
Visit of Cisternino and olive oil tasting
During this trip we will discover the “green gold of Puglia”. We will visit a traditional olive oil mill. Here, we we will learn about the traditional method of olive oil process, which uses granite millstones, as well as themodern processing system. We will taste seven different extra vergin olive oils produced by this olive oil farm in the heart of the wonderful Itria Valley. After the oil tasting, we will head to Cisternino, a charming town with a natural terrace overlooking the bucolic countryside of Itria Valley.
Cooking class flavours of puglia
We offer the opportunity to participate in introductory Apulian cooking classes where you will have the chance to gain practical knowledge about some of the most typical dishes of Puglia. These include the most famous orecchiette with broccoli rabe and delicious broad beans with chicory, among other delicacies.

With its 110,000 hectares of vineyards, Puglia is among the most important wine-producing regions in Italy. The region includes 28 DOC and 4 DOCG. Its main varieties are Primitivo and Negroamaro. During the wine cellar visit, we will experience all the aspects of winemaking, starting from the terroir of the landscape to the winemaking itself and ending with a delicious wine tasting!

Our day will end with a superb dinner at a “braceria” – a traditional restaurant with a menu that features a mix of grilled meats.
From Polignano to Savelletri, the scent of Adriatic Sea
Perched on a high rocky outcrop that reaches into the Adriatic Sea, Polignano is a destination not to be missed on a trip to Puglia. The best way to experience the atmosphere of this Mediterranean city is through a sunset walk on its terraces overlooking the sea. With its picturesque bays and hidden caves, Polignano was an ancient landing spot for merchants and fishermen. Today, its artisan shops and stylish bars are busy year round.
We will continue our day in Savelletri, where a seafaring atmosphere mixes with a picturesque setting. There, we will taste the flavors of the southern Adriatic Sea during a delicious seafood dinner.
Ceglie Messapica: culinary ecstasy for foodies
Ceglie Messapica is known as the “temple” of Puglian cuisine. It also is the headquarters of the international school of Mediterranean cuisine, MED Cooking School. In Ceglie, tradition meets the Puglian gastronomic innovations of skilled chefs, who were able to elevate Mediterranean cooking to the very top of international cuisine and earn recognition by UNESCO.
We will taste the delicacies of this land at one of the area’s most renowned restaurants. To top it all, we will enjoy a fascinating walk along the enchanting streets and piazzas of the ancient village.
