Learn the secrets of the Apulian cuisine.
We offer the opportunity to participate in introductory Apulian cooking classes where you will have the chance to gain practical knowledge about some of the most typical dishes of Puglia. These include the most famous orecchiette with broccoli rabe and delicious broad beans with chicory, among other delicacies. Following the traditional recipe and using few and simple ingredients and tools, such as water, semolina, a cutting board and a knife, you’ll learn how to perfectly shape this kind of pasta!
Orecchiette are the most famous dish of the Apulian culinary tradition. The iconic concave shape (so as to better gather sauce) is at the origins of their name, the Italian word for “little ears”. They are usually served with turnip greens, cauliflowers, broccoli and other vegetables, or even with meat sauce.
